Hello Club:Sandwich,

Good news! The nice part of Spring has arrived. We’ve got flowers blooming, birds chirping, horrific allergies, and meat on the grill. Yes, we’re finally in BBQ season. Huzzah!

As far as sandwiches are concerned, there are two types of BBQ: 

  1. The BBQ where you invite a few friends over to your backyard, fire up some charcoal, scrape off whatever ungodly mess has been stuck on your grill for 9 months, and toss on some burgers, dogs, chicken, corn, and whatever else tastes good cooked over hot coals. At this type of BBQ you’re probably also putting out sides like potato salad and pasta salad - and other salads that aren’t actually salad. And you also gotta have tasty buns and fixings. 

Grilled onions and jalapeños are an easy but effective way to spruce up your backyard burger. A brioche bun won’t hurt either. 🤤

  1. The BBQ from places where they cook low and slow to serve you tender, smoky cuts like overnight brisket, 7-hour pulled pork, fall off the bone ribs, etc. This is where the slices and shreds come together with various sauces and toppings that help to add some sweetness and tang to the fattiness and saltiness of the meat.

In both BBQ cases you’re very simply cooking meat with fire. What you do with that meat after it’s cooked is a different story with limitless possibilities. Here’s a small sample of those possibilities.

The KC Candy Melt from Elwood’s Shack in Memphis takes this burnt ends sandwich up a few notches with pickled onions, cheddar AND provolone, jalapeños and Carolina Gold BBQ sauce. 

If you’re grilling corn already, you might as well try some elote grilled dogs topped with crema and cotija cheese.

Moohogz BBQ in Greenville, SC is serving up this pulled pork sandwich with pickles and kimchi. We endorse pickled cabbage on everything, extra points when it’s spicy.
